Vito’s "Jim’s" Johnny Cakes

Show Context

Vito is on the run in New Hampshire. He falls in love with a cook named Jim and his 'Johnny Cakes.' These cornmeal pancakes make Vito briefly consider giving up a life of crime.

Fluffy cornmeal pancakes served with sausages.

Instructions

  1. 01

Scald: Mix the cornmeal, salt, and sugar in a bowl. Pour in the boiling water. Stir until the cornmeal swells and absorbs the water.

  2. 02

Thin: Stir in the milk slowly. The batter should be thicker than regular pancakes but pourable. Let it sit for 5-10 minutes.

  3. 03

Fry: Melt a generous knob of butter on a griddle or cast-iron skillet over medium heat.

  4. 04

Pour: Spoon the batter onto the griddle. Cook until the edges are crispy and golden brown (about 4-5 minutes per side). They take longer than flour pancakes.

  5. 05

Serve: Stack them high. Drown them in butter and syrup.

  6. 06

Eat: Eat them while checking your watch, wondering how long you can hide from Phil Leotardo.
