Honeycomb tripe stewed with tomatoes. A dish that separates the gangsters from the suburbanites.
Instructions

The Prep: Wash the tripe. Boil it in water with vinegar for 30 minutes. Drain. Rinse. Cut into thin strips. If you skip this, your kitchen will smell like a barn.

The Soffritto: Sauté onion, carrot, and celery in olive oil until soft.

The Tripe: Add the tripe strips to the vegetables. Cook until dried out slightly.

Deglaze: Add the wine. Scrape the bottom of the pot.

Simmer: Add tomatoes. Cover and simmer on low for 2–3 hours. The tripe must be tender, not rubbery.

Finish: Stir in fresh mint leaves right at the end.

Serve: Top with Pecorino Romano. Offer it to your host’s wife. If she refuses, leave it on the counter aggressively.
