Commendatori Linguine with Clams

The boys go to Italy. Paulie expects 'macaroni and gravy'. Instead, he gets served authentic Neapolitan seafood. He hates it. 'Where's the gravy?' he asks.

Authentic Neapolitan linguine with clams, garlic, and oil. No red sauce.

Instructions

    Boil: Start the pasta water. Salt it like the Mediterranean Sea.

    Sauté: In a large pan, heat oil and garlic. Don't burn the garlic, just let it turn gold. Add pepper flakes.

    Clams: Throw the clams in. Pour in the wine. Cover the pan immediately.

    Steam: Let them steam for 5-7 minutes until they open. Throw away any that stay shut (they are dead to you, like Pussy Bonpensiero).

    Toss: Drain pasta (save a cup of water) when it's al dente. Toss the pasta directly into the clam pan.

    Emulsify: Stir vigorously, adding a splash of pasta water to create a creamy (but cream-less) sauce. Stir in parsley.

    Serve: Eat it while complaining that you miss New Jersey.
