
Uncle Junior’s "South of the Border" Manicotti

While the 'Boca' episode is famous for... other oral fixation rumors regarding Junior, the Manicotti represents the old-school tradition. It's a dish best served when you aren't under house arrest.
Classic stuffed pasta shells. Best enjoyed when not under house arrest.
Instructions

The Shells: Par-boil the manicotti shells for about 4-5 minutes. They need to be flexible but not fully cooked. Drain and separate them on oiled baking sheets so they don't stick.

The Filling: Combine ricotta, half the mozzarella, all the Pecorino, eggs, parsley, salt, and pepper. Mix until smooth.

The Stuffing: Put the cheese mix into a piping bag (or a Ziploc bag with the corner cut off). Pipe the filling generously into each shell. Don't be stingy.

The Bed: Spread a layer of sauce on the bottom of a baking dish.

The Nap: Lay the stuffed shells side-by-side in the dish.

The Blanket: Cover with more sauce and the remaining mozzarella.

Bake: 350°F (175°C) for 35-40 minutes.

Serve: Best enjoyed while plotting to take over the family business from your nephew.
