
Hugh’s "Balsamic-Free" Birthday Sausages

Hugh just wants grilled sausages for his 75th birthday. He rants about the 'balsamic, balsamic, balsamic' that Carmela puts on everything. This is simple, working-class, and delicious.
Grilled sweet sausages with peppers and onions. No fancy balsamic.
Instructions

The Prep: Slice the peppers and onions. Do not add vinegar. Do not add glaze. Just peppers. Just onions.

The Grill: Preheat your grill to medium. (If you don't have a grill, use a cast-iron skillet, but don't tell Hugh).

The Veggies: Toss the peppers and onions in olive oil, salt, and pepper. Grill them in a basket or sauté in a pan until soft and slightly charred.

The Meat: Grill the sausages slowly. Don't burst the casing. Turn them often until they are browned and cooked through (160°F/71°C inside).

Assembly: Put a sausage in a roll. Pile a mountain of peppers and onions on top.

Serve: Hand it to the birthday boy. If your daughter tries to drizzle dark liquid on it, slap her hand away.
