Artie Bucco is spiraling. A new restaurant opens and everyone loves it. They rave about the gnocchi. Artie tries to uncover the secret. It's probably just ricotta gnocchi instead of potato.

Instructions

    Dry the Cheese: If the ricotta is wet, the gnocchi will be heavy lead bullets (Artie style). Strain it!

    Mix: Gently mix ricotta, parmesan, egg, salt, pepper, and nutmeg.

    Form: Fold in the flour gently. Do not overwork the dough. It should be sticky but manageable.

    Roll: Dust counter with flour. Roll dough into 'snakes.' Cut into 1-inch pillows.

    Boil: Drop into boiling salted water. When they float (about 2-3 mins), they are done.

    Sauce: Toss gently with your hot lamb ragout.

    The Giovanni Touch: Plate it, then place a scoop of cold, seasoned ricotta on top.

    Serve: Serve to your friends who will inevitably compare it to the 'other place' and make you insecure.
