
The "Holsten’s" Finale Onion Rings

The final scene. Tony, Carmela, and AJ sit in a booth at Holsten’s. 'Best in the state,' Tony says of the onion rings. They eat them whole. Then the screen cuts to black.
Crispy, beer-battered onion rings. The last meal.
Instructions

Cut: Slice onions into thick rings. Separate them.

Soak: Soak rings in ice water for 30 minutes (makes them crisp). Pat dry.

Batter: Whisk flour, baking powder, salt, and paprika. Whisk in the beer until smooth. It should be like paint.

Dust: Toss onion rings in a little dry flour first, then dip into the batter. Shake off excess.

Fry: Heat oil to 375°F (190°C). Fry in batches until golden brown and puffy (2-3 minutes).

Drain: Drain on a wire rack, not paper towels (to keep them crisp). Salt immediately.

Serve: Put the bowl in the middle of the table. Put a coin in the jukebox ('Don't Stop Believin''). Look up at the door every time the bell rings.
