Strain: Seriously, if you didn't strain the ricotta, you're going to have soup, not cannoli. The cheese must be dry.

Whip: In a mixer, whip the ricotta until smooth. Sift in the powdered sugar, add vanilla and cinnamon. Mix until fluffy.

Fold: Gently fold in the chocolate chips by hand.

Fill: Put the mixture into a piping bag. Pipe into the shells only right before serving. If you fill them an hour early, they get soggy. Nobody likes a soggy cannoli.

Garnish: Dip the ends in chopped pistachios or more chips.
