Artie’s "Funhouse" Mussels

Tony gets violent food poisoning right before the season finale climax. He blames Artie Bucco’s mussels. Artie insists they were fresh.

Mussels steamed in white wine and cream. Hopefully fresh.

Instructions

    Clean: Scrub the mussels and remove the 'beards.' If they are open, tap them. If they don't close, discard them. Freshness is key to avoiding Tony’s fate.

    Base: Melt butter in a large pot. Sauté shallots until soft.

    Steam: Add the wine and bring to a boil. Add the mussels. Cover tightly.

    Wait: Cook for 4-5 minutes.

    Finish: Once opened, remove mussels with a slotted spoon to a bowl.

    Sauce: Keep the liquid boiling. Pour in the cream. Let it reduce for 2 minutes to thicken. Stir in herbs.
