
Artie’s Green Bean & Mozzarella Salad

Artie yells at his customers for barely touching his curated antipasto. 'The mozzarella is fresh! The beans are crisp!' He takes it very personally. To honor Artie, you must eat the beans.
Crisp green beans and fresh mozzarella. Artie insists on the crispness.
Instructions

Blanch: Boil a pot of salted water. Prepare a bowl of ice water. Drop the beans in the boiling water for 2-3 minutes maximum.

Shock: Immediately plunge the beans into the ice water. This stops the cooking and keeps them bright green and—most importantly—crisp. Artie is watching.

Combine: In a large bowl, toss the dried beans, mozzarella balls, and tomatoes.

Dress: Whisk the oil, vinegar, salt, and pepper. Pour over the salad.

Finish: Top with fresh basil.

Serve: Serve as a starter. If your guests don't finish it, stand over the table and sigh loudly until they do.
